  2. Cut zucchini into strips and then into 1/2 inch pieces.

  3. Saute zucchini, garlic, and dried herbs in olive oil.

  4. Add drained tomatoes and cook until the liquid evaporates.

  5. Pour beaten eggs over the vegetables and cook until they start to set.

  6. Add cheese and fresh herbs, then continue cooking.

  7. Sprinkle remaining cheese over the top and cook until melted.

  8. Place frittata under the broiler to brown the top.

Ingredients



  • 1 can (14.5 oz.) diced tomatoes, very well drained

  • 1 medium zucchini, diced in 1/2 inch pieces

  • 1 T olive oil

  • 2 cloves garlic, finely minced

  • 1/2 tsp. dried basil

  • 1/4 tsp. dried oregano

  • 1 tsp. Spike seasoning (optional)

  • coarse ground black pepper to taste

  • 6 eggs

  • 1/2 cup grated Mozzarella cheese (or more)

  • 1/2 cup crumbled Feta cheese (or more)

  • 2 T chopped fresh Greek Oregano (optional)

  • 2 T chopped fresh basil (optional)

  • sour cream for serving (optional)




Instructions



  1. Pour the tomatoes into a colander placed in the sink and let tomatoes drain well.

  2. Cut ends off the zucchini, then cut it lengthwise into strips and then into 1/2 inch pieces.

  3. Use a 10 or 12-inch heavy frying pan which can go under the broiler. Spray pan with nonstick spray if needed. Preheat broiler.

  4. Heat olive oil in pan, add zucchini, garlic, dried herbs, and Spike Seasoning and saute for 3 minutes. Add tomatoes and cook for an additional 3-5 minutes.

  5. Beat eggs and pour over zucchini and tomatoes. Cook until eggs start to set.

  6. Add Mozzarella cheese, Feta, and fresh herbs. Cook for 3 more minutes.

  7. Sprinkle remaining cheese on top and cook until melted.

  8. Broil the frittata until the top is slightly browned.

  9. Garnish with fresh herbs and let sit before serving.

  10. Optional: Serve with sour cream.
