This new recipe for Tortilla Egg Bake is a fun and easy low-carb breakfast idea. I experimented with different ingredient combinations and came up with some delicious variations. Be sure to check them out below! If you try this recipe with your own twist, please let me know in the comments.


I used large low-carb burrito-sized tortillas that make four servings each. With low-carb ingredients, this dish has just over 2 net carbs per serving. Even if you have a big appetite, this is still a great low-carb or Keto breakfast option.


This Tortilla Egg Bake is not only delicious but also kid-friendly. Older children can even make it themselves; it's that easy! When we tested the recipe, Kara couldn't wait to go home and teach her kids how to make it!


I usually enjoy my Tortilla Egg Bake with sour cream and salsa on top. If I'm not in the mood for salsa, I like to add Green Tabasco Sauce. After baking, you can cut it into fourths and let kids eat it with their hands. It's also a convenient breakfast option for adults on the go!   • Large size low-carb tortilla; such as 10-inch La Banderita Low-Carb Tortillas (affiliate link)

  • Eggs

  • Pinch of Spike Seasoning (affiliate link); use any all-purpose seasoning that pairs well with eggs if you don't have Spike

  • Salt and fresh ground pepper to taste

  • Grated cheese

  • Optional diced ham, cooked sausage, or cooked bacon (for making one of the variations shown below)


What baking dishes can you use for the Tortilla Egg Bake?


We tested this recipe in two sizes of Pie Plate (affiliate link). It worked fine in the 8.5-inch crockery pie plate you see in the photos and also in a 9-inch glass pie plate. I don't have a metal pie plate, but I assume it will work as well; just keep an eye on it towards the end as the baking time might be slightly different.


What tortillas can you use for the Tortilla Egg Bake?


We used 10-inch La Banderita Low-Carb Tortillas (affiliate link) for this recipe, but you can also use any 10-inch low-carb tortillas. If making for kids, you can use traditional 10-inch flour tortillas, or opt for 10-inch gluten-free tortillas if needed (though these will be higher in carbs).


What cheese can you use for the Tortilla Egg Bake?


I typically use Mexican Blend Cheese for this recipe, but any grated cheese that you enjoy with eggs will work well. I'm looking forward to trying it with Feta for a unique twist!

How to make this Tortilla Egg Bake:

  1. Preheat oven to 350F/176C. Spray a pie plate with nonstick spray.

  2. Place a tortilla into the pie plate, pressing it down.

  3. Beat eggs with Spike Seasoning, salt, and pepper.

  4. Pour the eggs into the tortilla.

  5. Sprinkle with cheese.

  6. Bake for 20 minutes.

  7. Serve hot and enjoy!

  8. The Tortilla Egg Bake is best when freshly made, but leftovers can be warmed in the microwave.

Easy Variations for the Tortilla Egg Bake:



  1. The top left photo shows the Tortilla Egg Bake with cheese, which is the recipe in this post. Experiment with different types of cheese for a unique twist!

  2. The top right photo shows a Tortilla Egg Bake with Sausage. Sprinkle about half a cup of pre-cooked pork or turkey sausage over the eggs before adding the cheese. (I usually cook the entire package of sausage and store the leftovers in the fridge for later use.)

  3. The bottom left photo shows a Tortilla Egg Bake with Bacon. I used four slices of pre-cooked bacon from Costco, cut into short pieces and crisped in the microwave on a towel-covered plate.


When making the Tortilla Egg Bake, remember to sprinkle the bacon on the eggs before adding the cheese. In the bottom right photo, a Tortilla Egg Bake with ham is shown. Dice about 4 ounces of ham into small cubes and sprinkle it on the egg before adding the cheese. All the ingredients used in these variations are low in carbs, so they won't significantly change the carb count. The baking time for all variations is 20 minutes. following sentence using different words:
