I know some people think of spaghetti squash as just a low-carb substitute for pasta, but personally I put it in a class all its own, and I’ve enjoyed it in lasagna casserole, sauteed with vegetables, in a gratin with chard, and in a twice-baked casserole with pesto, to name just a few.

How do I cook the Spaghetti Squash for the Spaghetti Squash Taco Bowls?
The only challenging part of making this Spaghetti Squash Low-Carb Taco Bowl recipe might be cutting the raw squash apart before seasoning and roasting it. Some people microwave the squash for a few minutes to soften it, but I prefer roasting it. Roasting the squash allows you to season it and dry it out a bit during the process.

How to make Spaghetti Squash Taco Bowls:

- Cut the spaghetti squash into four pieces, remove seeds, rub with olive oil, and season with chili powder, Spike Seasoning, and pepper.
- Roast the squash until it easily strings apart, about an hour.
- While the squash cooks, brown the onions, brown the ground beef, and season the beef with Spike Seasoning, Kalyn’s Taco Seasoning, and pepper.
- Add water and diced green chiles and let the meat simmer until most of the liquid evaporates.
- Cut olives, tomatoes, and avocado. Toss the avocado with lime juice to prevent browning.
- Divide the hot spaghetti squash into four bowls.
- Top each with one-fourth of the hot beef mixture and grated cheese.
- Garnish each Spaghetti Squash Taco Bowl with diced tomatoes, sliced olives, and chopped avocado as desired!

Next, add the ground beef to the pan (add more oil if necessary) and cook until browned, breaking apart with a turner or a Potato Masher. Season with Spike Seasoning and Kalyn’s Taco Seasoning, cooking for a few more minutes.
Stir in the diced green chiles with juice and 2 cups of water. Simmer on low heat until most of the water evaporates, leaving some liquid in the pan to flavor the squash.
While the meat simmers, prepare the toppings by cutting up the tomatoes, draining and halving the olives, and chopping the avocados with lime juice.
Remove the roasted spaghetti squash from the oven and let it cool before scraping out the "spaghetti" with a fork.
Divide the spaghetti squash into four bowls and top each with the meat mixture, grated cheese, tomatoes, olives, and avocado.
