Cauliflower Rice Sausage Casserole – FBD
To cook the meat, we utilize a potato masher to break it apart while it's cooking. Once the sausage is cooked, transfer it to a bowl. Add a teaspoon of oil to the pan, cook the chopped mushrooms until they release their liquid and it evaporates, and then transfer them to the bowl with the sausage. In the same pan, heat 2 teaspoons of oil, add onions and green pepper, and cook until they start to brown. Next, add spices and cook for an additional 2 minutes. Introduce cauliflower rice to the pan with the onions and peppers, heat for a couple of minutes, and season with salt and pepper. Combine the cooked sausage and mushrooms with the other ingredients in the pan, add a cup of grated mozzarella cheese, and stir to distribute. Transfer the mixture to a casserole dish, sprinkle another cup of cheese on top, and bake for about 25 minutes until lightly browned.
