Beef and Chorizo Tacos – FBD

Beef and Chorizo Tacos is a new recipe inspired by my friend Donna's idea of combining beef and Chorizo as a taco filling. For this recipe, we added chopped Poblano pepper, white onion, minced garlic, and Herdez Salsa Verde to the meat. We also prepared a scrumptious Pico de Gallo as a taco topping and used low-carb tortillas for the tacos.


During testing, Kara and I thoroughly enjoyed this recipe. We served the tacos with extra Pico de Gallo on the side and a squeeze of lime, which I highly recommend. If you're looking for a fresh idea for Cinco de Mayo or any occasion, give this recipe a try!

What Chorizo did we use for these tacos?


Chorizo can refer to various types of spicy pork sausage from Spain, Mexico, and other countries. We used Mexican Chorizo, a spicy ground pork sausage that requires cooking. There are many good brands available, and the Mexican Chorizo we used was sourced from a local Kroger store. If you're in Utah, Harmon's ground Chorizo is recommended by our friend Donna.


How spicy is Mexican Chorizo?


Mexican Chorizo can have some heat, which is why combining it with ground beef for taco filling works well. The spiciness level is subjective, but we found this taco filling to be moderately spicy. To reduce the spice level, you can adjust the beef to Chorizo ratio!


What low-carb tortillas did we use for Beef and Chorizo Tacos?


We prefer Mr. Tortilla Low-Carb Multigrain Tortillas for our tacos. These tortillas are low in carbs and offer a great texture. While they may not be readily available in local stores, they can be purchased online from Amazon.


How low in carbs are the Beef and Chorizo Tacos?


When made with Mr. Tortilla low-carb tortillas, each taco with Pico de Gallo contains only 11 net carbs and provides 34 grams of protein. For a lower-carb option, you can swap the Pico de Gallo for crumbled Mexican cheese.

How to Make Beef and Chorizo Tacos:

  1. Heat olive oil in a frying pan, brown the beef and Chorizo, breaking it apart as it cooks.

  2. While the meat browns, chop the white onion and prepare the Poblano pepper.

  3. Transfer the browned meat to a plate, wipe the pan, add more oil, and cook onion, Poblano, and garlic.

  4. Add Salsa Verde, simmer until liquid is absorbed, and veggies are softened.

  5. Keep the meat warm while preparing Pico de Gallo with cherry tomatoes, onion, cilantro, lime juice, and Green Tabasco sauce.

  6. Heat tortillas, fill with meat mixture, top with Pico de Gallo.

  7. Serve hot with limes and extra Pico de Gallo if desired.
