Cauliflower Rice Sausage Casserole – FBD

  • Remove sausage and add more oil to the pan. Add chopped mushrooms and cook until the mushrooms have released their liquid and the liquid has evaporated. Remove mushrooms from the pan.

  • Heat another 2 tsp. of oil in the pan. Add onions and green pepper and cook until they start to brown. Add spices and cook for an additional 2 minutes.

  • Add the cauliflower rice to the pan and heat for a few minutes. Season with salt and fresh-ground black pepper.

  • Add the cooked sausage and mushrooms back to the pan and gently combine with the other ingredients.

  • Add 1 cup of grated mozzarella cheese and stir to distribute the cheese.

  • Transfer the mixture to the casserole dish and sprinkle the remaining cup of cheese over the top.

  • Bake for about 25 minutes, or until the top starts to lightly brown.

  • Serve hot, garnished with diagonally-sliced green onions if desired.
